  • ½ cup cooked Riceland Long Grain White Rice
  • ½ cup broccoli florets (fresh or frozen)
  • 1–2 tbsp shredded cheddar or mozzarella
  • 1 tbsp water
  • Salt & pepper to taste
  • Optional: a splash of ranch, nutritional yeast, or diced chicken for protein

Instructions

  1. In a microwave-safe cup or bowl: Add rice, broccoli, and 1 tbsp water.
  2. Steam: Microwave 1–2 minutes until broccoli is tender.
  3. Mix: Stir in cheese until melted.
  4. Season: Add salt and pepper.
  5. Serve immediately or portion into small containers for meal prep.

Notes

  • Perfect for after-school snacks or quick lunches.
  • Add diced leftover chicken to turn it into a full meal.
  • Freezer-friendly when assembled without cheese (add cheese when reheating).
