Filling - Apple and Peach
  • 1 1/2 cups Riceland Jasmine Rice, cooked
  • 2 cups sliced fresh or frozen - peaches or apples
  • 1/2 cup brown sugar
  • 1 Tablespoon vanilla
  • 1 Tablespoon lemon juice
Filling - Blueberry and Strawberry
  • 1 1/2 cups Riceland Jasmine Rice, cooked
  • 2 cups sliced fresh or frozen - strawberries or blueberries
  • 1/2 cup sugar
  • 1 Tablespoon vanilla
  • 1 Tablespoon lemon juice
Topping - Apple and Peach
  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon (apple and peach only)
  • 1/3 cup butter
  • 1/2 cup chopped pecan (apple and peach)
Topping - Blueberry and Strawberry
  • 3/4 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/3 cup butter
  • 1/2 cup silvered almonds (blueberry and strawberry)

Instructions

  1. Pre-heat oven to 350F.
  2. Combine filling ingredients and pour into a butter 8-inch square baking dish.
  3. In separate bowl, combine flour, sugar and cinnamon (if using).
  4. Cut butter into flour mixture with fork until mixture is crumbly.
  5. Add pecans or almonds.
  6. Sprinkle topping mixture over fruit filling.
  7. Bake 20-25 minutes. Serve warm, with ice cream if desired.
