Ingredients:
- 2 cups cooked Riceland jasmine rice
- 1 lb. chicken breast, cut into bite-sized pieces
- 1/4 cup soy sauce
- 2 Tbsp sesame oil
- 2 Tbsp honey
- 1 Tbsp rice vinegar
- 2 garlic cloves, minced
- 1 tsp grated ginger
- 1 Tbsp sesame seeds (plus extra for garnish)
- 2 cups steamed broccoli
- 2 green onions, chopped (for garnish)
Instructions:
1. In a small bowl, mix soy sauce, sesame oil, honey, rice vinegar, garlic, ginger, and sesame seeds.
2. In a skillet over medium heat, add a drizzle of sesame oil, then cook the chicken until golden brown and fully cooked.
3. Pour the sauce over the chicken and simmer for 2-3 minutes until slightly thickened.
4. Divide the cooked rice among 4 meal prep containers. Add a portion of the chicken and steamed broccoli to each.
5. Garnish and Store: Sprinkle with sesame seeds and green onions. Let cool before refrigerating.
