Ingredients
3 cups cooked Riceland Natural Brown Rice
1 cup cooked, cubed chicken breasts
1 cup tiny frozen peas, thawed
1/4 cup finely chopped red onion
2 Tablspoon. chopped fresh basil or 1 teaspoon dried basil
DRESSING
3-4 Tablspoon. vegetable oil or olive oil
2 Tablspoon. fresh lemon juice or wine vinegar
1 clove garlic, minced
1 teaspoon prepared mustard
1/2 teaspoons salt
1/4 teaspoons black pepper
Preparation
1. In bowl, combine rice, chicken, peas, onion and basil.
2. In a cup whisk oil, lemon juice or vinegar, garlic, mustard, salt and pepper until blended; toss with rice salad. Serve immediately.
