Ingredients:

- 2 cups cooked Riceland white rice  

- 1 lb. boudin sausage, casing removed  

- 1/2 cup breadcrumbs (plus extra for coating)

- 1 Tbsp cajun seasoning

- 1 tsp Celery seasoning

- 3 eggs, beaten

- Oil for frying  

Instructions:

1. In a bowl, combine rice, boudin sausage, breadcrumbs, seasonings, and two beaten eggs until evenly mixed.  

2. Shape the mixture into golf ball-sized portions.  

3. Dip in beaten egg, and roll in breadcrumbs.  

4. Heat oil in a deep skillet or air fryer to 350°F (175°C).  

5. Fry boudin balls in batches until golden brown, about 2-3 minutes per batch for oil and 10-12 minutes for air fryer.
