Ingredients:

- 1 lb. dried red beans, soaked overnight and drained  

- 1 lb. andouille sausage, sliced  

- 1 onion, diced  

- 1 green bell pepper, diced  

- 2 celery stalks, chopped  

- 3 garlic cloves, minced  

- 6 cups chicken or vegetable broth  

- 1 tsp Cajun seasoning  

- 1/2 tsp thyme  

- 2 bay leaves  

- Salt and pepper to taste  

- Cooked Riceland white rice for serving  

Instructions:

1. Add soaked red beans, sausage, onion, bell pepper, celery, garlic, broth, Cajun seasoning, thyme, bay leaves, salt, and pepper to a crockpot.  

2. Cover and cook on low for 8-10 hours or high for 4-5 hours until beans are tender.  

3. Use a spoon to mash some of the beans if you like a creamier consistency.  

4. Spoon over rice and garnish with chopped parsley or green onions.
