Ingredients:

For the Pancakes:
  • 1 cup cooked Riceland long-grain rice
  • 1 egg
  • 1 mashed banana or 1/2 cup applesauce
  • 1/4 cup milk

Instructions:

  1. In a bowl, mix cooked rice, egg, mashed banana, and milk until combined.
  2. Heat a non-stick skilled over medium heat. Spoon small amounts of batter into the pan.
  3. Cook for 2-3 minutes on each side or until golden.
  4. Serve warm with honey, maple syrup, whipped cream and/or fresh fruit.
