Ingredients:
For the Pancakes:
- 1 cup cooked Riceland long-grain rice
- 1 egg
- 1 mashed banana or 1/2 cup applesauce
- 1/4 cup milk
Instructions:
- In a bowl, mix cooked rice, egg, mashed banana, and milk until combined.
- Heat a non-stick skilled over medium heat. Spoon small amounts of batter into the pan.
- Cook for 2-3 minutes on each side or until golden.
- Serve warm with honey, maple syrup, whipped cream and/or fresh fruit.
