  • 1 cup uncooked Riceland white rice (or leftover cooked Riceland rice)
  • 1 cups milk
  • 1 cup heavy cream
  • ½ cup brown sugar
  • 2 tbsp molasses
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground cloves
  • ½ tsp ground nutmeg
  • 1 tsp vanilla extract
  • Whipped cream

Preparation

  1. If using uncooked rice, cook according to package instructions. If using leftover rice, skip this step.
  2. Combine the cooked rice, milk, and cream in a medium saucepan. Cook over medium heat, stirring occasionally, until the mixture thickens, about 20 minutes.
  3. Stir in the brown sugar, molasses, ginger, cinnamon, cloves, nutmeg, and vanilla extract. If using raisins, add them now. Continue to cook, stirring, for another 5-7 minutes until the pudding thickens further and the flavors meld.
  4. Serve the gingerbread rice pudding warm, topped with whipped cream.
