Ingredients
1 (16-ounce) package frozen chopped bell peppers and onions, thawed
2 (15-ounce) cans Italian stewed tomatoes
1 (4-ounce) can diced green chilies
2 (15-ounce) cans great northern beans, rinsed and drained
1 (14-ounce) can chicken broth
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
Bay leaf
1/2 cup water
1/2 teaspoon cayenne pepper
2 bags Riceland Boil-in-Bag Whole Grain Brown Rice
Preparation
- Combine bell peppers, onions, stewed tomatoes, green chilies, beans, broth, Italian seasoning, garlic powder, bay leaf and 1/2 cup water in sprayed slow cooker.
- Cover and cook on low for 5-7 hours. Remove bay leaf . Stir in cayenne pepper and rice, cover, turn on high and cook for 30 minutes or until rice is tender. Serve hot.
