Ingredients
- 1 cup cooked white rice
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/3 cup sugar
- Zest of 1 lemon
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- In a saucepan, combine rice, milk, cream, sugar, lemon zest, and vanilla.
- Cook over medium-low heat 20 minutes, stirring often.
- Stir in blueberries andcook 5 minutes more.
- Remove from heat and stir in lemon juice.
- Chill or serve warm. Garnish with extra blueberries or lemon zest.
