  • 1 cup cooked white rice
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/3 cup sugar
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions

  1. In a saucepan, combine rice, milk, cream, sugar, lemon zest, and vanilla.
  2. Cook over medium-low heat 20 minutes, stirring often.
  3. Stir in blueberries andcook 5 minutes more.
  4. Remove from heat and stir in lemon juice.
  5. Chill or serve warm. Garnish with extra blueberries or lemon zest.
