Ingredients
1 Tablespoon Riceland Rice Bran Oil
1 cup chopped onion
4 teaspoons minced fresh garlic
2 1/4 cups water
1 cup uncooked Riceland Natural Brown Rice
1/2 cup chopped tomato
1/3 cup coarsely chopped Greek or ripe olives
1/4 cup chopped fresh parsley
1 Tablespoon lemon juice
1 teaspoon salt
Preparation
1. In medium saucepan, heat oil. Add onion and garlic. Cook and stir over medium-high heat 2-3 minutes or until onion is just tender.
2. Stir in water and rice. Bring to a rolling boil and reduce heat to simmer (low boil).
3. Cover with tight-fitting lid and simmer 35-40 minutes.
4. Stir in tomato, olives, parsley, lemon juice and salt.
