  • 1 cup cooked Riceland Long-Grain White Rice, cooled
  • ½ cup oats
  • ½ cup almond butter
  • ⅓ cup pumpkin puree
  • ¼ cup honey or maple syrup
  • 1 tsp pumpkin pie spice
  • ¼ cup mini chocolate chips

Instructions:

  1. Mix all ingredients in a bowl.
  2. Roll into 1-inch balls. Chill before serving.

Variations: Add chia seeds, coat in coconut, or swap nut butters.
