  • 1.5 - 2 gallons Riceland Spanish Rice Blend, cooked
  • 6 lbs grilled chicken, chorizo, or carnitas
  • 1 gallon queso blanco or nacho cheese sauce
  • 2 lbs fire-roasted corn
  • 1 lb roasted poblano peppers
  • 1 lb slied jalapeños
  • Cilantro for garnish

Instructions

Prep
  1. Preheat oven to 350°F.
  2. Spread cooked Spanish rice in greased 2" hotel pan.
  3. Top with meat, corn, and peppers.
  4. Pour queso evenly over the top.
  5. Add jalapeños last.
Bake
  • 20 minutes or until bubbling.

Service Options

  • Serve with warm tortillas.
  • Serve over chips for a Tex-Mex skillet nacho.
  • Plate individually in cast iron for a "sizzle skillet" effect.
