Ingredients
1 1/2 cups Riceland Long Grain Rice
3 cups vegetable broth or chicken broth
1/2 pound spinach
2 green onions
1 jalapeno pepper
handful cilantro leaves
1 clove garlic
1 lime, juiced
salt and pepper to taste
Preparation
- Cook rice according to package directions using broth instead of water.
- Place spinach, green onions, jalapeno pepper, cilantro leaves, garlic, and juice of 1 lime in a food processor and process until finely chopped.
- Add to cooked rice and mix until well combined. Rice will need to be salted. Add salt and pepper to taste.
