Ingredients
1/4 cup butter
3 cups mini marshmallows
1/2 teaspoon lemon extract
1 lemon, zested
1 cup freeze dried strawberries, divided
4 cups crisped rice cereal
Preparation
- Line a 8x8-inch pan with parchment paper.
- Finely zest 1 lemon
- Using a food processor, crush 1/2 cup freeze dried strawberries
- In a large saucepan, melt butter over medium heat.
- Once butter is melted, add mini marshmallows and reduce heat to low.
- One marshmallows are melted and mixture is smooth, add lemon extract, crushed freeze dried strawberries, and lemon zest then remove from heat.
- Add crisped rice cereal to melted marshmallow mixture and combine until evenly coated.
- Pour mixture into prepared pan. Lightly press bars until even and top with remaining 1/2 cup of freeze dried strawberries.
- Let pan set at room temperature until completely cooled.
