Ingredients

For the fritters:
  • 1 large sweet potato, peeled and grated
  • 1 ½ cups cooked rice
  • 2 eggs, lightly beaten
  • ¼ cup finely chopped green onions
  • ¼ cup grated Parmesan cheese (optional)
  • ¼ cup gluten-free breadcrumbs (or regular if preferred)
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Cooking spray or light oil for the air fryer
For the cranberry sauce:
  • 1 cup fresh or frozen cranberries
  • ½ cup orange juice
  • ¼ cup maple syrup or honey
  • ¼ tsp ground cinnamon
  • Pinch of nutmeg

Preparation

  1. Combine cranberries, orange juice, maple syrup, cinnamon, and nutmeg in a small saucepan. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the cranberries burst and the sauce thickens. Set aside to cool.
  2. In a large bowl, combine grated sweet potato, cooked rice, eggs, green onions, Parmesan (if using), breadcrumbs, paprika, garlic powder, salt, and pepper. Mix until well combined.
  3. Mix 2-3 tablespoons of the mixture and scoop into small fritters with cookie scoop. You should have about 10-12 fritters.
  4. Preheat the air fryer to 375°F. Spray the basket with cooking spray or lightly brush with oil. Place the fritters in a single layer in the air fryer basket (you may need to do this in batches). Air fry for 10-12 minutes, flipping halfway, until they are golden brown and crispy on the outside.
