  • 4 cups cooked Riceland Long-Grain White Rice (cooled completely; day-old is best)
  • 2 large eggs
  • 1/2 cup sweetened condensed milk
  • 1 cup cooled rice pudding
  • 1 tsp vanilla
  • 2 tbsp sugar
  • Panko or finely crushed vanilla wafers
  • Optional: chocolate chips, cinnamon swirl, or raspberry jam in the center

Method

  1. In a large bowl, combine cooked rice, eggs, and sweetened condensed milk.
  2. Mix until cohesive and sticky.
  3. Chill pudding so it firms up.
  4. Scoop small teaspoons of pudding into center of rice mixture.
  5. Coat in panko or finely crushed vanilla wafers.
  6. Fry at 350°F for 3-4 minutes OR bake/air-fry at 400°F for 12-15 minutes (sprayed with oil).
  7. Dust with powdered sugar.
