Ingredients
- 4 cups cooked Riceland Long-Grain White Rice (cooled completely; day-old is best)
- 2 large eggs
- 1/2 cup sweetened condensed milk
- 1 cup cooled rice pudding
- 1 tsp vanilla
- 2 tbsp sugar
- Panko or finely crushed vanilla wafers
- Optional: chocolate chips, cinnamon swirl, or raspberry jam in the center
Method
- In a large bowl, combine cooked rice, eggs, and sweetened condensed milk.
- Mix until cohesive and sticky.
- Chill pudding so it firms up.
- Scoop small teaspoons of pudding into center of rice mixture.
- Coat in panko or finely crushed vanilla wafers.
- Fry at 350°F for 3-4 minutes OR bake/air-fry at 400°F for 12-15 minutes (sprayed with oil).
- Dust with powdered sugar.
